CSA Newsletter #6

Welcome to week 6 of our CSA program! Boy, today’s bag really screams summer time! It’s so amazing to think about a month ago and how nervous we were about the crops. Nature is so incredible!

The weeks are flying by! We can’t believe it is already August! The farm is really hitting it’s peak of production right now. Within another 1-2 weeks, the corn will be hitting and we always think of that as the height of summer.

We have been busy shifting cattle around as their pastures are getting empty and they are starting to peek over the fences to greener pastures. If any of you happen to have a secure fenced pasture which isn’t being used and you’d like “mowed” down, let us know! The longer we don’t need to use hay, the better!

Tomorrow night we are hosting a Pig Roast for all the Farm Camp scholarship donors, campers and their families, and camp counselors. The pig will roast for about 20 hours! It should be a fun dinner with lots of farm fresh side dishes and of course, homemade pies!

~Zucchini-Here are a couple of ideas for you to try!

~Garlic-Our Farm Hand dug these up yesterday. So they are super fresh.

~Red Cabbage-Last week I talked about using the red cabbage as slaw or just shredded and used fresh. But here is a recipe which is almost identical to my great-grandmother’s for a Sweet and Sour Cabbage. The only difference is my family always adds bacon! LOL! A little chopped bacon makes this so delish!

~Cucumbers-Yay! It’s cucumber season! I’d suggest some recipes for cucumbers but I’ll do that in a couple of weeks. Right now, just enjoy them sliced and sprinkle with a touch of sea salt! I could eat these all day, every day!

~Raspberries-The interns went out early this morning and picked these for you! So fresh and tasty!

~Cherries-Farmer Jon and I went back to our friends’ farm and picked up some more cherries, peaches, nectarines and apricots! Enjoy the yummy cherries!

~Green Beans! The star of the show this week! You are getting the very first harvest! We cooked some up for lunch and they were outstanding! We simply sauteed them in sesame oil, sprinkled a little salt and pepper and then splashed a little soy sauce on right before we ate them! Or should I say devoured them!
