CSA Newsletter #7
/Welcome to Week #7 of our CSA program! It’s been a crazy, busy week as we try to keep up with harvesting, prepping for fall, getting ready for fair and we also hosted a Farm Camp Pig Roast this past week for campers and their families, counselors and our generous scholarship donors! Our son, Ethan roasted a pig on a spit for 20 hours! It was so yummy!
Our youngest son is loading his steer up to take to the fair…all whopping 1325lbs! If you are at the fair, stop by the animal barns and check out all the animals. It’s fun to talk with the kids about their projects! Gives you hope for our future when you watch and listen to these knowledgeable and caring kiddos!
Saturday at the fair is the Annual Livestock Sale! If you or your business are looking for any beef, pork, lamb, goat for your freezer, we encourage you to attend the sale beginning at 8am! If you want more information, please contact us! This is a great way to support local agriculture and local youth plus fill your freezer!
What’s in the bags today….
~Beets: Yummy! Our favorite way of enjoying the beets are simply roasted with salt and pepper and then splashed with balsamic vinegar before serving. But there are dozens of ways to enjoy these little garden delights!
~Green Onions: Chop these up and toss into any dish for a zip of flavor! Or chop up and toss into a ziploc and freeze for the winter!
~Cucumbers: Slice these up and toss into your water this week to stay cool and hydrated!
~Zucchini: Ethan make zucchini boats for the Pig Roast. He filled them with a Mexican Street Corn mixture. He said you can google any recipe for Mexican Street Corn (loose and not on the cob) and then stuff it into a hollowed out zucchini. Top with cheese and then grill until soft and melted. These were phenomenal! If you have a person who doesn’t like summer squash, try this recipe! You might have a convert after they try this method!
~Flat Leaf parsley and Basil: The herbs are so fresh and abundant these days! I just have a jar full of basil in my kitchen (with a touch of water) for the lovely smell and to pinch a leaf or two off for cooking!
~Tomatoes: The first harvest of tomatoes! So exciting! If yours aren’t completely ripe, let me sit on the counter for a few days and they will ripen right up! We’ve got lots of tomatoes, so if you need more swing by the Farm Store!
~Garlic: With tomatoes and basil in the bags this week, we just had to add in some fresh garlic! Today we harvested it all and now it is curing on tables in the barn. We’ll clean up the area where it grew and prep it for next year!
~Cherries: Can you ever get tired of cherries?! We just have a bowl sitting out and we snack on them all day long! But I do love to can a jar or two of Spiced Bourbon Cherries for topping ice cream or in warm winter drinks…or straight out of the jar! Hopefully, I can get a few jars made before the cherries are gone this year!
